Carbon Copy, a brewery and winery launched in 2020, has taken over the former Dock Street Brewery West location in Philadelphia, The Philadelphia Inquirer reported.
Dock Street co-founder Rosemarie Certo announced the closure of Dock Street’s homebase, located in an old firehouse, in early May. At the time, Certo did not disclose who would be taking over the location, but described the new tenants as a “talented duo” of “seasoned brewers,” who would take the reins beginning June 1.
The duo is Carbon Copy co-founders Kyle Wolak and Brendon Boudwin, who will be converting the space into a brewery, taproom and restaurant.
Wolak and Boudwin started Carbon Copy after quitting their production and brewing positions at Tired Hands Brewing Company in Ardmore, Pennsylvania. Combined, they have more than 20 years of experience at craft breweries including Hammond, Indiana-based 3 Floyds Brewing, Greensboro, Vermont-based Hill Farmstead Brewery and San Diego, California-based Modern Times Beer.
Carbon Copy is now renovating Dock Street’s former 3,500 sq. ft. facility, with plans to open by Labor Day, the co-founders told Breweries in Pennsylvania. Along with the building lease, Carbon Copy has taken ownership of the facility’s 10-barrel brewhouse, as well as all fermenting and brewing equipment.
Carbon Copy also operates a small warehouse in Kensington, Philadelphia. They plan to keep the location for now to house the company’s wine production, according to the Inquirer. The new firehouse location will serve both beers and wine on tap, as well as kegged cocktails and bottle pours of saisons, the co-founders said.
Dock Street operated out of the location on the corner of 50th Street and Baltimore Avenue for 15 years. In 2019, the company opened the additional 10,500 sq. ft. brewhouse Dock Street South. The latter location will remain open.
A new Dock Street location is scheduled to open later this year in the city’s Fishtown neighborhood, led by Certos’ children Renata Certo-Ware and Sasha Certo-Ware, as well as Dock Street manager Lauren Wash, reported the Inquirer. Certo is shifting her focus to Dock Street Spirits, which launched in 2015, as well as the brewing side of the company.
