Single variety barleys that are micro-malted to our specs along with growing and malting our own thus...'Farm to Foam'
Locally grown hops that are farmed using organic and biodynamic principles
Our knowledge of fermentation and aging in barrels (elevage) to express nuance rather than overt styling. We have combined our experiences in winemaking and brewing to offer a unique landscape from where we can grow, malt, brew and age beers our beers with a sense of place and personality.
