Athens, GA — See the Stars is one of the Creature Comforts crew’s first barrel projects, beginning shortly after brewing operations commenced in April 2014. Co-Founders Adam Beauchamp and David Stein had experimented with smaller, maple-treated Corsair barrels before Creature Comforts’ opening, so after the brewery obtained several Willett bourbon barrels, a handful were sent to Mac’s Maple, a family-owned and operated maple syrup farm in New Hampshire. These barrels were filled with 100% pure wood fired maple syrup and allowed to sit for four months. They were then drained and sent back to Creature Comforts where they were filled with a Russian Imperial Stout. The stout was aged for over a year, settling into a finely balanced, multi-layered offering.
According to Adam, See the Stars’ name is based on the famous Ralph Waldo Emerson quote, “When it is darkest, men see the stars.”
“Emerson was trying to tell us that you can’t truly understand the light without the dark. This beer is very dark. It is the perfect accompaniment to an evening of revelry and star gazing,” Beauchamp said.
See the Stars will be released to the public through Creature Comforts’ first onsite bottle release tour on September 12th. The ability for this special tour to take place could not have happened without the law changes on July 1st. “We are proud to see progress with Georgia’s laws. It is a great chance for us to engage with our consumers at our brewery and send them home with a souvenir of this unique and beautiful beer,” says Creature Comforts CEO Chris Herron.
