The Brewtorium Brewery & Kitchen is looking for a highly-organized, self-motivated, quality-obsessed brewery operations manager to join its small but passionate team! We are a mom & pop 15 bbl brewery and restaurant in North Central Austin with a growing draft distribution footprint. This position involves tasks in all areas of the brewing process from wort production to packaging in addition to planning and administrative work. A passion for quality and a love & knowledge of craft beer is a must.
Job responsibilities include:
- Brewery Management
- Ensure that a high standard is maintained for beer quality
- Develop brewing schedule with staff
- Meet weekly with leadership team to discuss upcoming beer releases & brewing schedule as it pertains to front of house, marketing & the kitchen
- Maintain accurate raw materials inventory and order ingredients
- Oversee the duties of the brewery staff and provide support, mentorship & training
- Develop beer recipes
- Register labels with TTB & TABC for wholesale distribution
- Process wholesale orders and submit invoices to Fintech
- Maintain beer description sheets for front of house staff
- General equipment maintenance and parts ordering
- Monitor and control beer recipe costs
- File monthly comptroller report
- Pay monthly and quarterly excise tax
- Oversee Distribution Account Manager & provide support with sales and distribution tasks as needed
- Exhibit kindness, professionalism & patience toward all staff & guests
- Brewing
- Raw materials: Assessment, organization, management and inventory
- Wort production: Production of specified wort with attention to detail and world-class manufacturing techniques
- Yeast management: Harvesting, pitching, cell counts and daily monitoring of fermentations
- Barrel program: Filling, emptying and sampling as needed
- Bright beer: Transfer of finished beer, carbonation testing and quality assurance
- Packaging: Packaging of bright beer in kegs and cans
- CIP Operations: Cleaning of fermentation vessels, bright tanks and brewing equipment using industry best practices
- Keg management: cleaning, filling, scanning and inventory
- Close adherence to all SOPs and safety procedures, as provided
Required experience and abilities:
- 8+ years relevant brewing experience
- Experience in a brewery leadership and/or management role
- Ability to balance a brewing schedule of existing mainstay recipes & new recipes
- An obsession with cleanliness and sanitation
- Intensive attention to detail and self-motivation
- Ability to work unsupervised while maintaining safety and quality standards
- Time management skills and situational awareness
- Ability to manage multiple processes at one time
- Ability to effectively communicate with team members throughout the brewery
- Ability to develop reports and build & use existing spreadsheets
- Tools - Ollie Ops/Order, Ekos or similar brewery management software
- Availability to work nights or weekends if needed
- Ability to meet physical challenges of working in a brewery
- Candidates with mechanical or related experience preferred
- Ability to lift a minimum of 130 lbs.
- 21 years of age or older
