We are seeking an enthusiastic, knowledgeable, and dedicated Brewer to join our brewing team. As a Sake Brewer, you will play a key role in the production of our sake, from raw ingredient selection to fermentation and maturation, ensuring our products meet the highest standards of quality.


Job Overview:

The Sake Brewer is responsible for overseeing and executing the brewing process, ensuring consistency, quality, and adherence to production timelines. This role involves a combination of hands-on work in the brewing facility, as well as attention to the technical aspects of sake production, including fermentation, filtering, and bottling. The ideal candidate will have a deep passion for traditional sake brewing methods, an understanding of modern production techniques, and the ability to work in a team-oriented environment.


Key Responsibilities:

  • Brewing Operations: Oversee and execute all steps in the sake brewing process, including rice washing, steaming, fermentation, pressing, and maturation.
  • Recipe Development & Adjustment: Assist in developing new sake recipes and refining existing ones, adjusting based on seasonal factors, ingredient quality, and production needs.
  • Quality Control: Monitor fermentation progress, inspect rice quality, and test sake throughout the brewing process to ensure consistent taste, aroma, and quality standards.
  • Ingredient Preparation: Ensure proper sourcing and preparation of key ingredients (rice, koji, yeast, water) for each batch of sake.
  • Sanitation & Safety: Maintain a clean and safe brewing environment, adhering to sanitation protocols and safety regulations at all times.
  • Troubleshooting: Identify and resolve any brewing issues or anomalies that may arise during the production process.
  • Equipment Maintenance: Operate and maintain brewing equipment, ensuring everything is in good working order and repairs are handled efficiently.
  • Record Keeping: Document brewing processes, batch details, and any modifications made to ensure traceability and consistency.
  • Collaboration: Work closely with other team members, including the head brewer, production staff, and quality assurance team, to ensure smooth operations and high product standards.


Qualifications:

  • Experience:
  • Minimum of 3 years of experience in sake brewing or a related field (e.g., brewing, winemaking, fermentation).
  • Familiarity with traditional sake brewing techniques and modern practices is preferred.
  • Previous experience working in a sake brewery or similar beverage production facility is highly desirable.
  • Skills and Knowledge:
  • Strong understanding of fermentation science, microbiology, and brewing technology.
  • Knowledge of sake ingredients (rice, koji, yeast, water) and their impact on flavor profiles.
  • Familiarity with equipment used in sake production (steaming, fermentation tanks, presses, etc.).
  • Ability to perform quality control testing and troubleshoot brewing issues.
  • Strong attention to detail and organizational skills.
  • Ability to work independently and as part of a collaborative team.
  • Education:
  • Formal training in brewing, fermentation science, or a related field is preferred but not required.
  • A background in food science, microbiology, or a similar discipline is a plus.
  • Physical Requirements:
  • Ability to lift up to 50 lbs, stand for long periods, and work in a production environment.
  • Must be comfortable working with high temperatures, humidity, and strong aromas.
